209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): *REPEATED VIOLATION*
- Onion bags were stored directly on the floor that could result in physical food contamination. Staff moved the bags off the floor.
- In the walk in cooler, storage buckets were stacked one on top of another and no lid was used to cover the buckets. Bottom surface of bucket was observed in direct contact with the food (salad) that could result in potential food contamination. Staff discarded the salad at the time of inspection.
- Multiple containers of food in the walk in cooler and in the food prep area were stored on the floor. This could result in potential food contamination and inadequate cleaning of floors and hard to reach areas.
Corrective Action(s): Follow safe food storage practices to prevent the risk of food contamination.
- All food products to be stored at least 6inches off the floor.
- Use proper lids, food grade material to cover the food.

Observation: Food debris was observed behing the stand up freezer, under the shelving units and along the walls that could attract the rodents into the facility.
Corrective Action(s): Regularly clean the facility including the hard to reach areas to prevent build up of food debris.

Observation: Two chest freezers in the back had cracked inner plastic layer. This could interfere with the cold air circulation within the freezers and the plastic shards can fall in the food products and may cause potential food contamination.
Corrective Action(s): Repair the broken part of both freezers.

Routine inspection conducted.

Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Temperature of chest freezers (x2) at -23C and -24C
- Temperature of stand up freezer was -16C
- Walk in cooler at 3C
- Prep coolers (x2) below 4C
- Small gulab jamun cooler at 1C
- Front cooler at 1C
- No hot holding was conducted at the time of inspection.

Storage:
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Sanitizer spray bottle available and the concentration of bleach noted at 200ppm.
- Low temp mechanical dishwasher dispenses 50ppm chlorine residual and the concentration was verified during inspection.
- Chlorine test strips available onsite.
- Ice machine was found in sanitary condition.

Pest Management:
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.

Administrative:
- Operating permit was posted in a conspicuous location.
- Operator has valid FoodSafe Level 1 certificate.

ACTIONS REQUIRED:
- Start maintaining temperature logs and record temperature of all coolers and freezers daily.
- Regularly monitor the concentration of chlorine residual at low temp mechanical dishwasher and keep logs for verification.
- Provide a copy of registration for staff's FOODSAFE Level 1 course by December 9, 2022.
- Train staff regarding safe food storage practices.
- Ensure that all staff is aware how to make sanitizer solution. Add 1 tsp bleach in 1 Litre of water to prepare 200ppm bleach solution.
