Observation: Pizza prep cooler bottom section air temperature at 6.6 C and potentially hazardous foods ranging from 6-7 C. Top section foods are ranging between 6-8 C.
Corrective Action(s): Repair/adjust cooler so that the ambient air temperature is 4 C or below.
Potentially hazardous foods must not be stored in at more than 4 C for more than 2 hours.
Use walk-in cooler for extra products.
Keep inserts lids shut.
Correct immediately.
*Staff adjusted the temperature setting at the time of inspection, check again in 1 hour and then check every 2 hours.

Observation: 1. Front hand sink - was plugged in. This is a hand sink only - there is no reason to plug hand sink in. Garbage bin with lid does not open with foot pedal.
2. Hand sink near the pizza prep table has a leak.
3. Back hand sink not equipped with soap or paper towel.
Corrective Action(s): Ensure all hand sinks are equipped with hot/cold running water, liquid soap and single use towels.
Repair leak.
Replace garbage bin.
Correct immediately.

Observation: Staff member on-site does not have FOODSAFE Level 1 or equivalent. Operator absent at the time of inspection.
Corrective Action(s): Ensure that at least one person on duty has FOODSAFE Level 1 or equivalent in the operator's absence. Correct by March 5, 2023.

Routine Inspection

Cooked pizza slices are stored on display under lamp lights. Temperature of pizza slices ranges from 28-38 C. Hot holding unit is kept off.
Staff indicates slices are kept for a maximum of 2 hours however, no timers available and staff indicated they will be discarded when a new pizza is made.
As per the Pizza Pizza food safety plan, slices are to be hot held at 60 C or above and only kept for a maximum of 60 minutes.
Ensure food safety plan is implemented immediately. A copy of food safety plan provided to staff.

Walk-in cooler at 4 C or below.
Standing cooler at 4 C or below.
Walk-in freezer at -18 C or below.

Quats sanitizer dispensing at 200 ppm from dispensing station. A few bottles were checked and the solution was too weak.
Ensure bottles are checked daily and re-filled as needed. Obtain test strips to verify strength.

3 compartment sink is used for dishwashing. Staff on-site indicated that as openers, they are not responsible for dishwashing. To be followed-up at the follow-up inspection.

Some cleaning required behind equipment (standing cooler). Ensure all areas are visibly clean.
Foul odour near the 3 compartment sink - ensure grease-trap is serviced at an adequate frequency. Refer to Metro-Van greasetrap bylaw. Check other sources of odour (i.e. floor drains).

Follow-up inspection required.
