Observation (CORRECTED DURING INSPECTION): No bleach sanitizer solution was readily available for use during food preparation.
Corrective Action(s): Employee on-site stated bleach solution is only made when cleaning is being done. Sanitizer solution must be available for use at all times. Mix 1 oz of bleach with 1 gallon of water for proper concentrations.

Observation: Significant amount of grease and food debris observed on floor under stoves/fryers and in hard to reach areas.
Corrective Action(s): Deep cleaning of floors required. Ensure floors underneath and around all equipment are cleaned at least once a week.

Comments

- Hand washing sinks were properly supplied with hot and cold running water, liquid soap, and paper towels
- Bleach available for sanitizing, however solution was not readily available for use during operational hours (see violation code 302)
- Three-compartment sink and sink plugs available for manual warewashing. Sinks maintained in sanitary conditions.
- Walk-in cooler and display cooler were measured at 4C or colder
- Freezer measured at -20C
- Food storage practices satisfactory, all food stored off the floor and properly covered. Pest proof containers available for storage of dry ingredients.
- General sanitation satisfactory
- No signs of pest activity noted at time of inspection. Pest control is in place.
