A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezer was -15C; thermometers present; and hot holding unit not in use during the pandemic.
- Hand sink stocked with liquid soap, paper towels and running hot and cold water.
- Bleach sanitizer in spray bottles and cloth buckets had [Cl2] between 100-200ppm.
- Quats sanitizer at 3-comp sink was 200ppm.
- All foods stored in food grade containers; covered; labeled; date coded; stored in groups with proteins separate from non-proteins; and stored 6" off the floor on racks, shelves or platforms.
- General sanitation level is good. Exhaust canopy is clean was professionally cleaned 3 months ago.
- No signs of pests. Back door has a screen door installed on it.
- All surfaces are durable, smooth, sealed, cleanable, and level. The box which hot pizza pans are placed in, has been sealed/painted. Good.
- No expired foods in use. FIFO rules being followed.
- FS certified staff present.
- COVID-19 plan in use. Max # of patrons posted; floor markings present; masks worn by staff; staff work at designated stations to encourage 2m distancing; health screening done daily at start of shift; temperature of staff taken; increased cleaning and hand washing; and availability of hand sanitizer.
- Discussed inspection results with the owner, no signature obtained due to the pandemic. |
