Met with food operator, Sandra, and she holds a FS Level 1 certificate
- Discussed the cleaning/sanitation procedure - bleach used as approved sanitizer
- 2 compartment sink used for manual dishwashing
- hand wash station is supplied with liquids soap and disposable paper
- no food handling done at the time/ all is already done
- cooler operated at below 4C
- hot holding unit air temp measured at 80C
