Coolers: Both main kitchen coolers are at <4 C - good.
Downstairs food storage room: Produce cooler is at 6 C (for produce only) and cooler used to store condiments etc. (all lower risk foods to be stored in a cool place but do not require refrigerator storage) is at 12 C.
Do not store any potentially hazardous foods in either of these coolers unless they can keep them at 4 C or colder.
Temperature records for coolers are being kept. Use the internal thermometers to verify dry storage cooler temperatures (the thermometers on the outside of these coolers do not reflect the food /inside temperatures).
Thawing of foods is being done in cooler or in cold water.
Hand washing: Main kitchen hand washing sink has liquid soap and paper towels.
Recommend an additional sink in this kitchen (so there will be one for food preparation, one for hand washing, and two for dishwashing along with the main dishwasher). This is a recommendation only.
Quats sanitizer at 200ppm is used to sanitize food contact surfaces and wiping cloths.
Dishwasher has a final chlorine sanitizing rinse (50ppm detected after final rinse).
Food Safe - Please update your Food Safe Level 1 certificate if certificate was obtained more than 5 years ago. At least one person per shift must have Food Safe Level 1 (Basic Food Safe). Call me if you have any questions.
