GENERAL COMMENTS:

Sanitizer bucket has 200 ppm Quats except for some of the spray bottles. REFRESH SANITIZER IN THE SPRAY BOTTLES.
Handsinks are fully equipped
All freezers -18 Degrees Celsius or lower
All coolers 4 Degrees Celsius or lower
Hot foods were held above 60 degC
Meat slicers cleaned and sanitized every 4 hours.
Dishwasher 78 Degrees Celsius at plate level
Temperature log's being maintained.
Roast chicken is kept out in the warmer for about 4 hours after which the chicken is pulled and cooled for use in other dishes.
