Observation (CORRECTED DURING INSPECTION): High-temp dishwasher reached a maximum rinse temperature of 62.9 degrees Celsius at time of inspection. The machine must reach a minimum rinse temperature of 71 degrees Celsius to sanitize effectively.
Corrective Action(s): Employees indicate that the machine takes approximately 1 hour to fully-heat. Staff were provided thermolabels (2) to confirm that the machine reaches sufficient sanitizing temps after heating up.
*Use a thermolabel to confirm temperature after the machine has heated-up. Email a photograph of the thermolabel to health officer to confirm that it is reaching 71 Celsius rinse temperature or higher.

If the dishwasher is unable to reach 71 Celsius rinse temperature:
-Contact a repair technician to service the machine
-Manually sanitize all dishware/utensils/pots/pans/etc. using a 100ppm chlorine solution after washing in the dishwasher as temporary measure until the machine is repaired.
