Observation (CORRECTED DURING INSPECTION): Prep cooler lid open at time of visit; only one seated customer observed. Surface temperature of various inserts ranged 10 to 14 C. Operator advised inserts were just filled from walk-in cooler.
Corrective Action(s): Staff must keep prep cooler lid closed when not in use to maintain temperature, especially as the ambient environment is warm.

Observation: Again, cardboard used to line between dough cart and produce racking. Operator advised previous soft plastic cover ripped and is on order.
Corrective Action(s): Strongly suggest using a material that is more durable than the soft plastic (i.e. plexiglass). You have been warned previously about this issue, further non-compliance may result in enforcement actions from FHA.

Observation: No time tracking available for pizza by the slice.
Corrective Action(s): For potentially hazardous items, must display > or = 60 C at all times. Otherwise, must maintain a time tracking system where pizza must be out no more than 2 hours. Operators to develop a time tracking system and keep all records indicating: product type, time placed in display, time pulled/wasted (1 day).
