*Daily logs available on site. However the chemical logs need to have correct classification of the sanitizers (Eg, low temp. glass washer- use approved sanitizer. Bleach at minimum 50 ppm)
- Quats is used at 3 compartment sink and food counters measured at concentration 200 ppm.
- High temp dishwasher - final rinse temperature 82 C. Test strips are available.
- At least one person per shift has a Food safe training.

*Temperature checks:
- Back freezer -18 C or below
- Walk in cooler 4 C or below
- Prep cooler (top & bottom) 4 C or below
- Salad cooler 4 C or below
- Hot holding 60 C or above

*Hand sinks are fully equipped with liquid soap, paper towel, hot & cold running water
*No sign of pest activity at the time of inspection. "Orkin" is the pest company.
*Overall, premises is maintained in a good sanitary method.
