Observation (CORRECTED DURING INSPECTION): 5 cooked tilapia were noted in the hot hold unit with an internal temperature of 45.0 - 50.0C.
Corrective Action(s): **Issue corrected at the time of inspection**
As per staff, tilapia were just brought out about 45 minutes ago before placing in the hot hold unit. Staff brought the fish to reheat during the inspection.
Going forward, please ensure all food that needs to be hot hold must be cooked to 74.0C within 2 hours prior to placing in the unit for warming.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1. Sanitizer container was available at the start of the inspection, however detergent was mixed into this solution.
2. No drain plugs were available for the 2-compartment sink for the facility to practice proper manual warewashing procedures.
Corrective Action(s): **Issues corrected at the time of inspection**
1. Sanitizer detergent solution was discarded. Sanitizer solution was remixed and 200 PPM chlorine residual was detected. Do not mix any other chemical to your sanitizer solution to allow it to effectively sanitize all food contact surfaces.
2. Drain plugs were purchased during the inspection. Proper manual warewashing procedures were reviewed with the staff. All dishwares must be properly washed with the manual procedures until the dishwasher is fixed.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Handwash station in the cooking area was occupied with a pot in the basin at the start of the inspection. Soap was not presented in a dispenser and no paper towel was available at the dispenser.
Corrective Action(s): **Issue corrected at the time of inspection** Pot was removed from the basin. Soap dispenser and paper towel dispenser were both filled when issue was identified. Operator must ensure that the handwash station is accessible at all time and adequately stocked for food handler to wash their hands when required.

Observation: Dish machine was not functioning at the time of inspection.
Corrective Action(s): Operator must use take-out containers for all dine in services until the dish machine is fixed. Proper manual warewashing procedures were reviewed with the staff. All dishwares are to be washed, rinsed, sanitized and air dry with the 2-compartment sink until dish machine is fixed.

Routine inspection conducted today:
All refrigeration units were at 4.0C or below.
All freezer units were at -18.0C or below.
No signs of pest activities noted during the inspection.

Note: As per operator, permit fee for current fiscal year (April 1, 2023 - March 31, 2024) of $150 was paid to the previous district health inspector in the form of a cheque. This will be verified with the Billing Department. If confirm payment is not received, operator has 10 business days to make payment to Fraser Health.
