Observation (CORRECTED DURING INSPECTION): Interior of ice machine had accumulation of mould/mildew/biofilm.
Corrective Action(s): Staff instructed to discard ice at time of inspection (and stop accepting iced beverage orders).
Ensure to thoroughly clean and sanitize all parts of the ice machine at least once a month.
Take apart ice machine parts as needed and manually scrub and sanitize.

Observation (CORRECTED DURING INSPECTION): Hand sink was missing soap.
Corrective Action(s): Ensure your hand washing sink is always supplied with liquid soap and paper towels, in addition to hot and cold running water.
Staff refilled soap dispenser at time of inspection.

Observation: An updated food safety plan for the processing, reheating, and hot-holding procedures for the sandwich fillings in pouches has not been received.
Corrective Action(s): Submit updated food safety plan detailing processes for various sandwich fillings (chicken, beef, etc.).
Correct by: Friday, June 17th.

Comments

- Hand sink was supplied with hot and cold running water and paper towels, however was missing soap (see violation code 401 above).
- Quat-based sanitizer solution available at 200 ppm in spray bottles for sanitizing food-contact surfaces.
- Low-temperature chemical dishwasher measured 100 ppm chlorine residual, detected at the dish surface after final rinse cycle. Good.
- All coolers and prep cooler inserts were measured at 4C or colder.
- All freezer temperatures were satisfactory
- Hot-held food items were held at 60C or hotter.
- Temperature logs well-maintained and up to date
- Reviewed cooling procedures at time of inspection. **Reminder to cool hot food rapidly from 60C to 20C within 2 hours, then from 20C to 4C within the next 4 hours.
- Food storage practices satisfactory
- Equipment maintained in sanitary conditions (other than the ice machine - see violation code 301 above).
- General sanitation satisfactory at time of inspection
- No signs of pest activity noted at time of inspection
- **Updated Food Safety Plan still to be submitted - see violation code 212 above.
