**Observation made from outside prior to going in: operator shaved meat off the cone and took the meat to the back to microwave as a second cooking step; then transferred the meat into the hot holding unit**
Chlorine sanitizer on site and in use; observed clean cloths in the sanitizer bucket; detected 200 ppm of residual chlorine
Discussed manual dishwashing procedures; appropriate response was provided (wash->rinse->sanitize)
No sign of pests noted at the time of inspection
*Note: Observed samosas on sale; samosas are purchased (pre-cooked) from an approved food facility (Golden Samosas; must provide receipts upon request); product comes in frozen. Operator thaws and keep them in display cooler then warms them on order through microwave and grill. Operator must ensure the contents are reheated to 74 C minimum*
