Observation (CORRECTED DURING INSPECTION): Observed a staff using a trolley cart to transport a container of cooked mixed vegetables to the self serve station at the time of inspection. The drape located at the kitchen entrance touched the top layer of food while passing by. The staff took the batch back to the kitchen and discarded the top layer. Ensure to use a lid when transporting foods from the kitchen to the self serve station.

Observation (CORRECTED DURING INSPECTION): Observed cooling of beef/egg stew type food. It was in a stainless steel container with a lid on it. Internal temperature measured at 60C. Manager cited that this will be placed in a cooler. Reviewed T&T's Food Safety Plan on cooling. The manager transferred the hot food to a shallow container with loosely covered lid as per T&T's Food Safety Plan. The manager was directed to review T&T's Food Safety Plan on cooling with her staffs.

Observation (CORRECTED DURING INSPECTION): Discarded the following items in the walk in cooler due to time and temperature (stored over night) abuse:
- Raw whole chicken: 8.8C
- Marinated chicken: 9C

Observation (CORRECTED DURING INSPECTION): (Repeated violation)
Following items in the glass hot holding unit were in a temperature danger zone:
- Whole BBQ chicken: 47.3C
- Whole BBQ duck: 58.3C
- Whole BBQ pork: 56.6C
- BBQ chicken legs: 50.9C

Hot holding unit was not turned on when foods were placed in. The unit was turned on at this time and reached 60C.

Following items in the hot selfserve line were in a temperature danger zone:
- Sweet and sour pork: 50C
- Black pepper pork: 50C

Observed an internal temperature of deep fried bean curd at 47.8C.

All products in this observation section were prepared less than 2 hours ago. Everything reheated to >74C at this time.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: The walk-in cooler (where ducks are dried for further processing)'s ambient air temperature was measured at 10C. Internal temperature of raw meats measured at 8.8-9C. All potentially hazardous foods in this cooler were relocated to a different walk-in cooler at this time.
Corrective Action(s): Service the walk-in cooler so that it can maintain foods at 4C or less. Do not use this walk-in cooler until the temperature is verified by the inspector. Contact the inspector once the cooler is serviced.

Routine inspection conducted:
All hand washing stations are fully equipped with hot and cold running water, liquid soap and paper towels.
Food contact surface sanitizer measured at 200 ppm QUATS as per test strips (pails and dispensers).
General sanitation is adequate.
All coolers measured at 4C or less (see one exception in the violation section).
All freezers satisfactory - products in frozen state.
No sign of recent pest activity noted at this time. Routine pest control in place.
