- No signs of pest activity
- Deli slicers and cleaned and sanitized every 2-3 hours
- 200 ppm QUATS sanitizer available at the 3 compartment sinks and inside spray bottles
- Staff on duty have FOODSAFE level 1
- All coolers are 4C or below
- Freezer below -18 degree C
- All hot holding units are 60C and above except the soup.
- All food items are stored at least 6 inches off the floor
