304 - Premises not free of pests [s. 26(a)]
Observation: Fruit fly infestation remains in bar area and has become much more significant since inspection dated May 31, 2018. Significant flies observed ontop of the bar counter, at all of the beverage/mix dispensers stations including the sinks, in the nozzle of these dispensers not currently immersed in water, under counters in severarl stations, at and along plumbing work, and generally flying around. In discussion with staff flies are migrating into the kitchen area of store. Existing traps set by PCO observed empty. Pictures taken of some of the more significant harbourage areas.
Corrective Action(s): See attached Correction Order to eliminate or substantially reduce fruit fly infestation by date noted on Order.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: - Some parts of the bar are not sufficiently cleaned to help mitigate the fruit fly infestation as discussed during previous inspection and directed by Pest Control technician at the time. Water and/or beverage continues to accumulate and stagnate on many shelves, in corners, on floor, at and around glasswasher, along and under the extensive matrix of exposed plumbing, and in hard to reach areas of bar.
- Some parts of the bar design, primarily of wood construction already beginning to show signs of rot and deterioration and is likely affecting the cleaning process and subsequently the breeding opportunities for the flies.
- Beverage and waste transport lines observed slimy and accumulations of organic matter inside and around these lines remain unchanged from previous inspection.
Corrective Action(s): Improvements to overall cleaning are required to impact fruit fly infestation. Bar redesign may be required should sanitation not be significantly improved. This will be reviewed upon follow up inspection date noted on Correction Order.

Comments

The fruit fly traps currently in use are not effective tool to mitigate infestation problem. They were observed empty at the time of inspection despite hundreds to thousands of fruit flies in area. Larger systemic corrective action may be necessary for this facility as a higher level of intervention dictates. Discuss with Pest Control for advice in this matter.
