Observation (CORRECTED DURING INSPECTION): Dishwasher not reaching 71C at dish. Green light on. Operator states it indicates it must be warmed up, let dishwasher warm up, llight turned off. Still not reaching 71C at dish, light immediately remained on.
Corrective Action(s): Have dishwasher serviced to maintain 82C at manifold (71C at dish). In gppd operation to run multiple loads if required.

Quats over 200ppm. Sanitizer available at kitchen and pub (mislabelled at pub).

When washing dishes use bleach solution (1 ounce bleach to one gallon water) to sanitize dishes until dishwasher is serviced.
