301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Lid covering container that holds hot gravy (in crock pot) is dirty (a lot of food debris noted on lid). Prep coolers on the hot (cook) line and the two door salad prep cooler require cleaning. The left side cook prep cooler has water accumulating in the bottom and the two door salad prep cooler has a lot of food debris on the shelves and at the back, inside area of the cooler. There is a small amount of black residue on the ceiling and side walls of the ice machine.
Corrective Action(s): Gravy was moved to another container and lid and container were washed and sanitized in the dishwasher. Line coolers were cleaned by staff during the inspection. Clean and sanitize ice machine (including the ceiling) more frequently and also clean line coolers more frequently.

Observation (CORRECTED DURING INSPECTION): Bus pans containing washed kale and romaine lettuce are being stacked so kale is being contaminated with the bottom of the bus pan.
Corrective Action(s): Kale was discarded during inspection. Cover food to protect from contamination using a cleaned and sanitized lid or plastic cover. Do not stack bins unless protected by a lid. Also, keep the raw pork in a separate area - corrected during inspection.

Observation: Fruit flies noted in the glassware and dishwashing area (under counter).
Corrective Action(s): Provide pest control for flies. Keep dishwashing area clean (clean and sanitize surfaces in this area). Provide screening for back door.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Spilled food noted under the dry storage shelves near the back door. Floor in the draft beer walk in requires cleaning. Food service counter (for hot food) across from the glassware washer requires cleaning.
Corrective Action(s): Continue to follow a written routine cleaning schedule. Increase frequency of cleaning coolers, floors, and dishwashing area. Clean up spilled food promptly.

Comments

Hand washing stations have liquid soap and paper towels. Keep cooked food away from the kitchen hand sink to protect from contamination.
Two cook side line coolers, 2 salad prep coolers, walk in cooler, bar coolers used to store dairy and server cooler - all have a temperature of 4 C or colder. Temperature records are being kept.
Reheating of food to be hot held: gravy at 47 C is currently being reheated. Reheat on stove to 74 C quickly (within 2 hours) and then store above 60 C (as per your food safety plan).
Cleaning - see above.
Glassware and main dishwashers both have a chlorine final sanitizing rinse (50ppm chlorine measured after final cycle).
Pest control: See above regarding flies and fruit flies. Rodent monitoring traps are in place and more are left overnight. Food is in pest-proof bins. No obvious signs of rodents (no droppings noted today in kitchen or food storage areas). Manager advised that licensed pest control is contracted and visits twice per week. Fax or email latest reports. Continue with cleaning and licensed pest control. Continue to monitor for activity and seal any areas where rodents may enter premises.
