Routine check:
Hand washing station has liquid soap and paper towels.
Coolers are at 4 C or colder with the exception of display cooler which is for food that does not require refrigeration (berry pies - no pumpkin pie or whipped cream, pop, water, etc.).
Each gelato flavour has a designated scoop.
Milk is pasteurized.
No raw eggs in gelato.
Reviewed procedures for cleaning and disinfecting the scoops. These are washed, rinsed, sanitized (100-200ppm), air dried.
Gelato machine is sanitized as per machine specifications (chlorine sanitizer is used).
For wooden shelf surfaces, ensure that they are cleaned on a regular basis. Ok for now. |
