209 - Food not protected from contamination [s. 12(a)] Observation: 1) Sauce was stored in an opened metal can - repeat violation. 2) Food were double stacked directly on top of one another - repeat violation. Corrective Action(s): 1) Once canned foods are opened, the contents must be transferred to a food grade container to prevent potential contamination of foods. Sauce was transferred at the time of inspection. 2) Discontinue the practice of stacking foods directly on top of one another to prevent potential contamination. Containers can be physically separated by lids, plastic wrap, etc. Violation Score: 3

-Follow-up inspection to April 05, 2023. -Chemical dishwasher had a final rinse of 100ppm chlorine on the dish surface, Operator has test strips to verify the chlorine concentration. -Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels. Ensure handwash supplies are monitored and replaced as needed. -Facility has completed cleaning and sanitizing of areas affected by rodent droppings. Operator has been serviced by professional pest control operator. Operator was recommended to install a door sweep - operator to install door sweep. --Please contact the inspector if you have any questions or concerns. -Signature not required due to COVID-19.
