209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION):
A box of dry pancake mix and bottles of popcorn flavor were found to stored on the floor in the staff washroom. These are food items and shall NOT be stored in the washroom on the floor, the washroom is a "dirty" place where food can become contaminated.
Corrective Action(s):
Immediately remove the food items from the staff washroom and store it on a shelf or rack that is 6" off the floor. During the inspection, staff moved the food items to a dry storage rack.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
The following areas have accumulated dust, grease, or mildew on the food contact surfaces:
1) Dust found on the ceiling tiles by the air diffusers. The dust can fall into food.
2) The ice machine baffles and interior surfaces of the ice bin have mildew on it. The mildew can get into the food.
3) The walls behind and beside the flat grill have accumulated grease. This will attract pests.
Corrective Action(s):
Wash and clean the mentioned areas, and increase the frequency at which these areas are cleaned.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezer was -17C; hot holding unit above 60C; and thermometers present.
- High temperature dishwasher rinse cycle was 77.6C at the plate's surface as per max/min thermometer.
- Quats in spray bottles was 200ppm.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- All foods stored in food grade containers; covered; labeled; date coded; stored in groups with proteins on the lowest shelf below RTE foods; and 6" off the floor on shelves.
- Staff use utensils to handle foods.
- FoodSafe certified staff present (75%-100% have certificate).
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good. Improvement needed in the mentioned areas. Exhaust canopy professionally cleaned in June 2018, and due again in Nov. 2018 (as per service sticker).
- 2 flats of eggs are always at room temperature, but they will be used within 2 hours.
