Observation (CORRECTED DURING INSPECTION): Hot potentially hazardous foods (egg bites and chicken tenders) were less than 60C. Food items are time tracked using a two-hour discard time. Items past their discard time were not removed from the hot holding units.
Corrective Action(s): Hot potentially hazardous foods must be maintained at or above 60C or foods which are time tracked must be discarded after two hours. Food items were discarded at the time of inspection.

Comments

-Walk-in cooler was at 4C.
-Walk-in freezer was at -18C.
-Under counter coolers were at or below 4C.
-Counter top cooler was at 2C (screen was kept closed).
-Milk dispensers were at or less than 4C.
-Hot holding of soup was greater than 60C. Soup was cooked to greater than 74C prior to hot holding.
-Temperatures checked and recorded daily.
-High temperature dishwasher had a final rinse temperature of 73C on the dish surface (minimum of 71C required for proper sanitizing).
-Quats sanitizer pails are changed every 2 hours. Sanitizing solutions and dispenser tested at 200ppm.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Ice Capp wands disinfected with Quats tested at 200ppm
-Mixing spoons stored in ice and water mixture.
-General food storage practices good at the time of inspection. Foods covered and stored off the floor.
-Ice machine clean and well maintained.
-General sanitation good at the time of inspection.
-Facility is serviced by a professional pest control operator on a monthly basis. Tin cat traps have been removed from the facility. Did not observe any signs of pests at the time of inspection.
-Washroom clean and well maintained.
-FoodSafe Level 1 valid for Supervisor until August 4, 2023.
