Observation (CORRECTED DURING INSPECTION): Raw chicken in a prep cooler probed at 6.2C. Operator said it has been stored in the prep cooler for 1hr.
Corrective Action(s): Keep the lid closed as grills across the cooler tend to warm up the cooler. Check its temperature after 1hr, then if the temperature exceeds 4C, discard.

206 - Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Cooked bacon stored in a metal container that is on a grill probed at 44C. Operator mentions that it has been stored more than 2 hours. Potentially hazardous food like bacon must be hot-held at temperature 60C or above to avoid danger zone (4C-60C).
Corrective Action(s): Operator voluntarily discarded the bacon. Please ensure that all hot potentially hazardous food are stored at 60C or above.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Quats sanitizer solutions in a bucket measured 0ppm (used for food contact surfaces). Quats sanitizer must have concentration 200ppm or greater to effectively inactivate foodborne illness causing pathogens
Corrective Action(s): Operator voluntarily replaced quat sanitizers to new quats sanitizers measuring at 200ppm. Ensure that all sanitizers are in a adequate concentration every 2-4hrs

Observation: Few dead and live cockroaches found on sticky traps underneath 2-compartment sink and next to a boiler. Operator is aware of infestation and indicated that pest control company is also aware of this. But no indication of cockroach infestation on the latest pest control report.

Corrective Action(s): Perform deep and thorough cleaning of all premises with the emphasis of boiler and dishwashing areas. Increase the frequency of cleaning and monitor for further pest activities

Cooler (walk in) = 3C
Prep cooler = 4C
Line coolers = 3C
Hot holding unit = 62C
High temp dishwasher was measured 73.2C at plate surface
Wall mounted quats sanitizer on 2-compartment sink measured 200ppm
Quats chemical strips in place
Broken washing machine stored next to 2-comp. sink. Operator mentioned that it will get replaced with a new one after Covid-19 situation has been solved and his business goes back to normal.
