Observation: Leak observed causing water to pool on floor of employee washroom (not in use). Wall deteriorating and mould/fungus beginning to grow.
Corrective Action(s): Must contain leak and eliminate water ponding on floor. Remove deteriorated wall structure to prevent the spread to other parts of premises.

Comments

Fermentation process significantly reduced in last two years. Production only occurs approx. 6 times per year. No production currently underway. Facility is old and parts of the physical plant need updating as per previous inspection. Generally, the facility is organized. Floor is old, walk-in cooler wall ceiling construction not ideal - exposed wood etc. Pest control contract in place and inspections occur bi-weekly.

Aside from yeast production any increase or changes to types of food production offered will require update to the sink and equipment washing area (including floor).
