Observation (CORRECTED DURING INSPECTION):
The bucket of sanitizer to soak the growler nozzles had [Cl2] of 50ppm. Staff indicates the sanitizing solution is changed at least once a week. The [Cl2] shall remain at 100ppm at all times to ensure proper sanitization.
Corrective Action(s):
Discard the bucket of sanitizer and replenish with a fresh solution. The solution shall be changed when the concentration/strength is less than 100ppm. Retrain staff to use chlorine test strips to check the strength of the sanitizer solution daily.
During the inspection, staff discarded the sanitizer solution and replenished with fresh solution at 100ppm.

Observation (CORRECTED DURING INSPECTION):
The back 3-comp. sink's paper towel dispenser was not working and dispensing towels. Staff are unable to properly wash and dry their hands prior to handling food.
Corrective Action(s):
Immediately repair the paper towel dispenser so it dispensing towels.

Observation:
The neighboring space has been converted into a bottling & canning area, as well as extra storage space (vats) for beer. Cconstruction, alteration, or expansion of the premises must be approved by our office the City prior to making the changes to ensure it meets health standards.
Corrective Action(s):
Spoke to owner about the expansion and the lack of approval prior to construction. Owner shall submit floor plans for the proposed space and a description of the activities that will be occurring in the space. Approval from our office shall be obtained prior to any further construction from happening.

Observation:
The walk-in-cooler storing kegs of beer being used for the front bar had pooling beer on the floor. Staff speculate there is a leak in one of the beer lines in the wall, which is then draining onto the floor. The accumulation of beer or food on the floor will attract pests and damage walls and floors.
Corrective Action(s):
Mop the walk-in-cooler floor at least once a day to remove the pooling beer.

Observation:
There appears to be a leak in a beer line (possibly to the growler filling station) in the front walk-in-cooler. This is causing beer to pool on the floor in the walk-in-cooler and possibly causing damage to the wall structure. Leaking beer will also promote and encourage pests (drain & fruit flies) to breed in these environments.
Corrective Action(s):
Find and repair the leak to prevent pest infestation, damage to wall and floor material, and to allow proper cleaning of the facility.

A routine inspection was conducted, the following observations were made:
- Coolers were 4C or colder; freezers were -12C or colder; thermometers present; and temp. checked daily and recorded.
- Glasswasher had [Cl2] of 50ppm; [Cl2] spray sanitizer was 100ppm; chlorine test strips available.
- Hand sinks stocked with liquid soap, paper towels; and running hot and cold water.
- Food storage practices done correctly. Foods stored in food grade containers; covered; 6" off the floor on shelves; and in groups to prevent cross contamination.
- Food handling practices done correctly. Utensils used to handle foods.
- General sanitation is satisfactory, improvement needed in mentioned areas.
- A few drain/fruit flies observed.
- FoodSafe certified staff present.
