Follow-up to code 306: The areas noted were cleaned. However, some food residues were still noted on the bins and floors. Ensure to have the bins and floor deep cleaned.
Other areas to clean have been noted:
-the shelves at the front (storing dishes across from sashimi cooler)
-the sashimi cooler door, handles and bottom
-the sliding door cooler (inside glass door)
-the floor behind the grill and stove (cooking area)
-the exhaust canopy had grease build-up.
-the cooler next to the deep fryer: lids, doors, handles, gaskets
-the shelves above the freezer at the back.
-the platform storing the dishes near the back sink
-wall at the back next to the exit door
-the wall at the dishwasher
-the floor underneath the dishwasher
-the door, handles, gaskets of freezer (back).
-the towel dispenser (front and back)
-the right side of the stove.
Note: The shelves at back were made of raw wood. Operator was instructed to have them painted to bear a smooth, easily cleanable, non-absorbent surface before the next routine inspection.
