Observation: What appears to be mildew / biofilm (pink film) was observed in crevices of ice machine interior panel and surrounding areas.
Corrective Action(s): Discard ice as mildew / biofilm may potentially contaminate ice. Thoroughly wash, rinse, then sanitize all interior surfaces of ice machine. Use an approved food contact surface sanitizer (e.g. bleach water sanitizer at 100 ppm chlorine) then allow to completely air dry. Date to be corrected by: Today.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): No sanitizer available in kitchen at time of inspection.
Corrective Action(s): Bleach water sanitizer prepared at time of inspection and measured at 100 to 200 ppm chlorine. Ensure sanitizer (e.g. bleach water) is available at all times at the correct concentration for effective sanitizing of food contact surfaces.

Observation (CORRECTED DURING INSPECTION): 1. Liquid soap dispenser for front hand sink was obstructed by several items. In addition, no paper towels were supplied near the hand sink.
2. Back hand sink was completely obstructed by several items including multiple empty containers.
Corrective Action(s): Obstructing items removed from back hand sink. Ensure containers are properly washed and sanitized. Liquid soap dispenser was made accessible at time of inspection and single use towels were supplied for front hand sink. Ensure that at all times, all hand washing stations are accessible / unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels. Enforcement action, including issuance of violation ticket(s), discussed with owner. Photos taken. Discussed concerns with limited storage capacity (refer to comments section).

Observation (CORRECTED DURING INSPECTION): Bag of rice located in close proximity to mop sink.
Corrective Action(s): Bag of rice relocated away from mop sink. Ensure all food is stored off the floor, covered, and away from potential sources of contamination.

Observation: Food debris and/or grease was observed in the following areas:
1. Door seals of all coolers / freezers.
2. Interior surfaces of coolers / freezers (particularly bottom interior and interior of some doors)
3. Floor under back area hand sink and nearby dry storage rack
4. Floor between ice machine and prep cooler
Corrective Action(s): Ensure all above-noted areas are properly cleaned. Food debris and/or grease may potentially attract pest activity and may potentially contaminate food and/or food contact surfaces. Date to be corrected by: October 31, 2019.

- Freezers at -18 degrees C or less
- Hot holding internal food temperature at 60 degrees C or more
- Raw animal products were not observed to be stored above ready-to-eat products
- High temperature dishwasher measured 75 degrees C at the utensil surface during the final rinse (minimum 71 degrees C at utensil surface)
- No signs of pest activity observed at time of inspection

Storage capacity must be increased (for example, installation of additional shelving and/or cabinets) or food and other item/equipment storage must be limited based on the current storage capacity in order to facilitate the safe storage and handling of food. Reminder to submit to the Environmental Health Officer (EHO) written proposal(s) for increasing storage capacity prior to making any changes. Proposal(s) must be reviewed and approved by the EHO. Storage capacity to be assessed at subsequent inspection(s).
