Observation: Grease build up at ventilation canopy, and grease build up and standing water under the dishwasher is not cleaned yet. Professional cleaning crew are scheduled for end of March to improve general sanitation of overall facility.
Corrective Action(s): Follow up inspection is to be conducted after the cleaning is done.

Observation: The 3 door cooler near the Asian cuisine kitchen is not operational. Parts are ordered to service the unit. The unit was unplugged and emptied out.
Corrective Action(s): Follow up inspection is to be conducted once the unit is serviced and operational.

Follow up inspection was conducted with the assistant manager.

Hot holding units are measured at or above 60C.
High temperature dishwasher's sanitizing cycle was measured at 72.7C.

Work order is placed for cleaning and to service the 3dr cooler. Follow up inspection is to be conducted once all violations are addressed.
