Observation (CORRECTED DURING INSPECTION): Food trays were manually used in the 3-compartment sink, but were not sanitized in the 3rd compartment or in the low temperature dishwasher. All equipment must be sanitized manually in the 3-compartment sink or in the low temperature after a washing cycle.
Corrective Action(s): Equipment were washed and sanitized in the low temperature at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Back hand washing station was not equipped with paper towels.

Observation: Same spatulas were used for cooking raw meat products and handling finished products. To prevent cross contamination of food products, a designated set of utensils are to be used to handle fully cooked products only.

Observation: Cockroaches noted in the monitoring traps place in the front food processing area underneath the counter-space where the rice cookers are placed. Facility has a contract with a pest control company and an insecticide treatment has been scheduled.
Corrective Action(s): In addition to insecticide treatment, maintaining a high level of sanitary condition is critical in eliminating and preventing pest problems.

Observation: Build-up of old food debris and grease was noted under the grill unit in the front serving area. More frequent and thorough cleaning is cleaning to prevent the accumulation of grease and food debris.

Comments

Routine inspection conducted and the following were noted:
Front prep-cooler and back standup cooler at 4C and equipped with thermometerh.
Back standup freezer at -18C.
Wiping rags stored in a 100ppm chlorine solution.
Food items stored at least 6 inches off the ground.
Low temperature dishwasher achieved a final concentration of 50ppm. Ensure chlorine test strips are used to monitor the unit daily.
Hot holding of rice at 60C.
