* Ensure that bottoms of blender jugs are thoroughly scrubbed during washing to remove slime build-up. * Door gaskets on all coolers and freezers must be cleaned frequently to remove juice spills etc. * Sanitizer solution in the wiping cloth bucket must be changed when its gets murky. Replace at least every 4 hours. Walk-in freezer< -18 degrees C. Under-counter refrigerators< 4 degrees C. Panini sandwich display cooler: 4.1 C. Sandwich preparation cooler below 4 degrees C. Under-counter freezer units maintained between -10 to -15 C. Quats sanitizer at the dispenser and in spray bottle tested 200 ppm. Liquid soap and paper towels available at the hand sink. General sanitation is satisfactory.
