Hot holding above 60 C. dishwasher at 75 C - spray sanitizer at 1000 ppm chlorine - should be at 100 to 200 ppm. **label spray bottle "1/2 tsp bleach to 1000 ml water** Get light for display cooler to allow for better cleaning of unit. hand wash stations equipped with paper towels and liquid soap. OK.
