Observation: Black coving at base of wall and floor across from back door has peeled off the wall. Damage is also noted on the corner edge of the same wall due to heavy traffic.
Corrective Action(s): Ensure the coving is repaired and the corner edge of the wall is repaired and strengthened to protect it from further damage. Discussed with manager about possible metal edge protector or plastic to be placed over the exposed edges.

Routine:

-Handsink and washroom supplied with hot & cold water, liquid soap and paper towel
-Low temp dishwasher noted 50 ppm chlorine
-Sanitizer noted at 200 ppm QUATS
*test strips water logged - no longer usable. Do not leave test strips next to handsink, get new test strips and keep in dry place near sanitizer dispenser (recommend on the wall above dispenser).
*Ensure sanitizer is always prepared during operation

Temperatures satisfactory:
1. Prep cooler: 3 C
2.Walk in cooler: 2 C
3.Beverage cooler: 4 C
4.Freezer unit: -18 C
5. Pizza display: 68 C/ 67 C (pizzas are discarded every 2 hours)
*No log recorded - maintain a log for each pizza to time track that pizzas are only kept for 2 hours and then discarded - follow your FSP
-Back door kept closed - screen door available with door sweep
-Food is covered and protected from contamination
-No signs of pest activity noted during inspection
-General sanitation satisfactory
*Ensure pizza prep cutting board is maintained in sanitary condition at all times
