Observation (CORRECTED DURING INSPECTION): Repeat violation: 3 containers of creamers near coffee station stored at room temperature, ice had completely melted.
Corrective Action(s): All 3 containers of creamers discarded at time of inspection. You are no longer permitted to store creamer on ice, as staff are not properly maintaining this system. All creamers will have to be stored in a refrigeration system.

206 - Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Left side of display hot-holder is only maintaining 120F as opposed to the right side (180F), despite the warmer being closed for approximately 10-20 minutes.
Corrective Action(s): All items on left side were reheated to 74C inside the oven, then placed on the right side. No items are allowed on the left side until a follow-up inspection can verify that the warmer can maintain 60C / 140F consistently throughout the unit.

Observation: Left side of hot-holder (from cashier's side) cannot consistently maintain 60C / 140F ambient temperature.
Corrective Action(s): Adjust the hot-holder so that it can consistently maintain 60C / 140F or warmer.

Comments

Routine inspection conducted. The following observations were made:

1. Temperatures
- Premise generally in good sanitary condition and well-organized
- Undercounter cooler / condiment holder at approximately 2-4C
- Undercounter cooler behind cashier at 4C
- Undercounter freezer behind cashier at approximately -18C
- Display cooler at centre of store at 4C
- Walk-in cooler at 3-4C (including display units)
- Walk-in freezer at -18C (including display units)
- Stand-up stainless steel cooler at -18C (at back storage area)
- Coolers and hot-holders equipped with accurate thermometers

2. Hygiene and Sanitizing
- 3x handwash stations all stocked with hot/cold running water, liquid soap, and single-use paper towels
- Quaternary ammonium compound (quats) spray bottle at approximately 200-400 ppm
- Sanitizer dispenser releases 200 ppm quats
- Utensils and tongs in sanitary condition

3. Storage
- Food products stored at least 6" off the floor
- Janitorial area separate from other areas of the store
- Bakery compartment maintained in sanitary condition
- Store / shelving area is generally well organized

4. Administrative
- Employee does not have FoodSafe 1 - manager has booked a class. Send invoice to the health inspector.

5. Pest Control
- No recent signs of pest activity at time of inspection
- Last pest control inspection from company was today - no signs of pest activity noted by company

6. Recommendations
- Ensure that you routinely clean the inside of your cappuccino and specialty coffee machines, as they are starting to accumulate some powder

A follow-up inspection will occur to ensure that the violations stated above have been rectified. As stated, you are no longer allowed to store creamer on ice. Store the creamer in a refrigeration unit.
