Corrective Action(s): Cheese and other perishable food items must be stored in the prep line cooler when not in use.

Observation (CORRECTED DURING INSPECTION): Front hand sink was out of liquid soap.
Corrective Action(s): Soap dispenser refilled at time of inspection. Ensure to maintain constant supply of liquid soap and paper towels at all hand wash stations.

Observation (CORRECTED DURING INSPECTION): Employee on duty was wearing gloves and hand washing with gloves before moving to other tasks.
Corrective Action(s): Ensure to remove gloves and wash hands properly at the hand sink. Gloves must be changed frequently when switching task and wash hands before putting on new gloves. This was discussed with the employee and operator.

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Slicer machine still had some debris build up.
Correction: Ensure to clean the slicer machine thoroughly and sanitize. All debris must be removed so sanitizing can be done properly.
Comments

Hand sinks supplied with liquid soap and paper towels.
Bleach sanitizer measured 100 ppm.
Health permit valid and posted in a visible location.
Temperature checks:
Hot holding for pizza was at 61-63 deg C.
Prep line cooler at 3-4 deg C.
Other prep line cooler was at -2 deg C.
Walk-in cooler was at 1-2 deg C.
Upright freezer was at -21 deg C.

No signs of pests noted at time of visit.
- Ensure you are monitoring for pests (seek out pest control company for advice)
General sanitation was satisfactory at time of visit.

Note: Temperature log has not been done for a month.
Ensure to check and record temperatures of all coolers, freezer and hot holding.
