- Routine inspection is conducted and following are observed: - Handsinks are supplied with hot and cold running water, liquid soap and paper towel - All coolers - walk-in cooler, two prep coolers, drinks cooler are less than 4C - Chest freezer and upright storage freezer are less than -18C - Pizza in hot holding unit is measured at 40C. It is time tracked and discarded after two hours - Sanitizer solution in spray bottle is measured at 100ppm chlorine sanitizer solution - No evidence of pest activity is noted. - Secondary cook step is implemented when cooking donair meat, reviewed the steps - Foodsafe level 1 is verified.
