Observation (CORRECTED DURING INSPECTION): No logs available for checking the dishwasher. Chlorine test paper is expired. Cannot guarantee their food contact surfaces are adequately cleaned and sanitized.
Corrective Action(s): All food contact surfaces (plates, cutting boards, etc.) to be re-washed and sanitized once the dishwasher is serviced.

Observation (CORRECTED DURING INSPECTION): Bar area's hand washing station was missing a liquid soap. Liquid soap was replenished at this time.

Observation: Fruit fly activity noted near the CO2 tanks in the bar area.
Corrective Action(s): Clean and sanitize bar area, especially hard to reach areas. Install traps. Reduce the fruit fly activity.

Observation (CORRECTED DURING INSPECTION): Large amount of standing water observed by the glasswasher in the bar. Staff mopped the water at this time.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1. Salad cooler and entree counter cooler's ambient temperature observed at 8-10C.
2. The mechanical dishwasher's sanitizng cycle measrued at 67C and <10 ppm chlorine.
Corrective Action(s): 1. Service the salad cooler and entree counter cooler. Do not use these coolers until they are serviced and able to keep foods at or below 4C.
2. Service the dishwasher.

Routine inspection conducted. Closure order issued at this time.
Hand washing stations are fully equipped with hot and cold running water, liquid soap and paper towels (one exception; see code 401 for more information).
All coolers (other than two identified in the violation section) was measured at 4C or less.
All freezers at adequate temperature.
QUATs sanitizer measured at 200 ppm as per test strips.
Glass washer's iodine concentration measured at 12.5 ppm as per a test kit.

Closure order issued at the time of inspection. The dishwasher is repaired during an inspection. Operator removed all food contact surfaces from the storage area and ran through the dishwasher. Closure order rescinded at this time.
