Staff wear gloves and are told to wash hands at least every 30min, as per internal operation guidelines; hand washing was observed during inspection.
Staff washroom generally clean and well supplied with soap and paper towels in dispensers.
Washrooms generally clean, well maintained, soap in dispensers, air hand dryer.
Food temperatures in prep line cooler <4C on top and bottom.
Walk in cooler <4C.
Freezer <-18C.
Hot holding units have internal temperature probes >140F, surface temp of roasts >60C. Surface temp of cooked roast and freshly sliced meat >74C.
Probes also used to monitor internal temp of roasts while they cook, operator aware to monitor and timers are in place.
