Observation: The following areas were observed with rodent droppings in the bakery:
- Behind and around the dough mixer(s)
- Behind the dry storage shelving units in both the preparation and storage area
- Behind the preparation table
- Underneath and along the wall below the 3-compartment sink
Corrective Action(s): Remove rodent droppings wearing appropriate PPE. Wet the affected areas by sanitizing the areas with 1 part bleach to 10 parts water. Clean areas in contact with rodent droppings with water, detergent and disinfectant. Contact pest control company to conduct an inspection, assess, and apply further treatment as necessary. Continue to submit pest reports to the health inspector after each visit.

Observation: Back double-door in bakery used for receiving observed with missing door sweep. A large gap (larger than a size of a pencil hole) is observed between the bottom of the doors and the floor.
Corrective Action(s): Install a door sweep at the back double-door to seal the gap between the door and the floor and to prevent pest entry/harbourage/breeding on site.

309 - Chemicals, cleansers, & similar agents stored or labeled improperly [s. 27]
Observation: Bottle labelled "sanitizer" in the bakery measured at 0 ppm chlorine and 0 ppm QUATs sanitizer concentration with test strips. Staff stated that the bottle contains water.
Corrective Action(s): Ensure labelled sanitizer bottles contain QUATs sanitizer at a concentration of 200 ppm. Prepare sanitizer in labelled spray bottles as per approved sanitation plan.

Observations:
- Walk-in cooler at 3'C
- Walk-in freezer at -20'C
- Temperature logs are maintained up to Sept 20, 2023
- No hot-holding on site
- General sanitation is satisfactory
- Hand washing stations are supplied with hot and cold running water, liquid soap and paper towel
- QUATs sanitizer in spray bottle (X1) measured at 200 ppm QUATs concentration with test strip
- High-temperature dishwasher measured at 77'C at plate surface (above minimum final rinse temperature of 71'C)
- All food stored at least 6 inches off the floor and covered
- FOODSAFE Level 1 trained staff available on site
- Permit posted in a conspicuous location on site
