Observation (CORRECTED DURING INSPECTION): Dishes were placed in the hand sink located in the deep frying area. Corner hand sink in dishwashing pit was lacking paper towel.
Corrective Action(s): Dishes were removed. Do not place utensils/dishes in hand washing sinks. Sinks should always be free of obstruction and accessible at all times.
Re-fill paper towels in corner hand sink. Note: this sink is not used much as it is in the far corner near the dish pit.

Observation: 1. Newspaper used to line vegetables.
2. Raw meats stored above raw vegetables (carrots covered in newspaper) in 'cooked meats' cooler.
3. Dish pit sinks used for food preparation.
Corrective Action(s): 1. Only use food-grade material for covering food. Do not use newspaper.
2. Store raw meats underneath fruits and vegetables.
3. Clean and sanitize dish pit area prior to using it for food prep and do not do dishes at the same time.
Correct immediately.

Observation: 1. Dirty knives/knives that were in use stored between wall and prep table.
2. Build up of dust on ceiling tiles above food prep area.
3. Food debris underneath and behind shelves in dry storage and in food prep areas.
4. Build up of water around mop sink/closet.
5. Ice machine was dirty.
Corrective Action(s): 1. Do not store knives between wall and prep table. Corrected during inspection.
2-5: Clean and sanitize all surfaces/walls/floors/ceiling so that they are visibly clean. Correct by April 19, 2022.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Ambient air temperature of undercounter cooler in front service area registered at 8 C. Used for the storage of condiments and cake. Operator stated cooler was being opened and closed a lot.
Corrective Action(s): Adjust/service cooler so that it can maintain a temperature of 4 C at all times. Re-locate any potentially hazardous foods to a working cooler if temperature does not drop to 4 C or below in the next 2 hours.
Correct immediately.

Routine Inspection:

-Both Hand washing sinks in food prep area equipped with hot and cold running water, liquid soap and paper towel. Reminder: do not place utensils/dishes in hand washing sinks.
Note: Corner hand sink in dishwashing pit was lacking paper towel, please re-fill as all sinks should be fully equipped.
-All coolers (except under counter cooler in front service area - see above violation) at or below 4 C
-Chest freezer registered at -15 C (should be -18 C, adjust setting if needed)
-Walk-in freezer registered at -20 C
-Hot holding of rice above 60 C.
-Quats sanitizer dispensed at approx 100 - 200ppm. Discussed with staff how to make a solution of 200-400 ppm as per manufacturer's recommendations.
-Wiping cloths stored in sanitizer solution. Good
-High temperature dishwasher registered at 74 C on utensil surface during final rinse cycle.
-Permit to operate posted in a conspicuous location.

Note: temperature records not maintained. Temperatures should be checked daily and recorded.
Note: all foods must be from an approved source and proof of purchase should be available upon request.

***Provide updated Food Safety Plan for chicken crackling by April 26, 2022.
