Observation: Rack for air drying of clean dishes is also used to store spices. Spices and food residue found on what should be clean dishes on the rack.
Corrective Action(s): Do not store spices or food items on the air drying rack by the dishwashing station.

Observation (CORRECTED DURING INSPECTION): Chlorine solution of over 200ppm (strong enough to bleach out the test strip) in bar towel soak bucket; solution was cloudy with food debris and filth.
Corrective Action(s): Change bar towel soaking solution as needed so that food debris and filth do not interfere with sanitizer chemical. Replace sanitizer solution with 100-200ppm chlorine, and provide a clean bar towel for surface sanitizing. (Note: 30mL bleach to 1L water)

Observation: Observations made of areas that MUST be cleaned, sanitized, and re-organized include:

1) Old mouse droppings found in dry storage room: droppings were found on blue food storage bin lids, and under shelves (on top of and beside round metal trays); clean and sanitize this area. Monitor for return of droppings, and if there are new droppings, acquire professional pest control services.

2) Spice cart by stove top: remove all items from cart; clean and sanitize cart; provide clean, food grade containers for spices

3) Shelf by spice cart: this area is heavily cluttered, and has been neglected. There is a lot of storage space here that can be utilized. Remove all items from shelves, clean and sanitize shelves, and place back only what is needed for operation of premise. Discard or re-locate all other items.
