Observation (CORRECTED DURING INSPECTION): - High Temperature Sanitizing Dishwasher is not reaching adequate temperatures to achieve sanitizing. Unit is used to washed and sanitize bulk bin containers and parts.
Corrective Action(s): - Bulk bin containers and parts must be manually washed and sanitized:

1. WASH with hot water and detergent.
2. RINSE with clean hot water.
3. SANITIZE with 200 ppm QUATS
4. AIR DRY

- Review manual washing and sanitizing procedures with employees. Do not use dishwasher until it has been repaired and/ or replaced. Temperature readings must be achieved per unit data plate.

Observation: - Live rodent (mouse) observed running back and forth along wall edge behind dishwasher/ vegetable prep area/ bulk foods storage shelves).
Corrective Action(s): - Report activity to pest control service technician.
- Store items at least 6" (15 cm) off the ground to facilitate cleaning and pest control monitoring.
- Allow for a gap between wall and shelving units so that area can be accessed for pest control service.
- Ensure all areas of the premises are accessible for pest control service.
- Follow all recommendations provided by your pest control service technician.
- Continue to maintain a high level of sanitation throughout the premises, especially in hard to reach areas.

- Dishwasher appears to be leaking water during cycle.
Corrective Action(s): - Repair and/ or replace High Temperature Sanitizing Dishwasher.
- Bulk bin container and parts must be manually washed and sanitized until dishwasher is repaired and/ or replaced and is working per unit data plate specifications.
