Routine check of main kitchen.
Food is supplied to assisted living and care facility (300 residents).
Units have equipment for cold holding and hot holding (pre-heated steam table used for food storage during food service).
Additional dishwashing area and servery not part of this inspection.
Food Services (Hospitality) Manager has Food Safe level 1 (or equivalent) and states all staff have food safety certificates.
**Note: Check expiry dates and renew prior to expiry.
Cold holding - temperatures of coolers and freezers satisfactory.
Temperature records are kept up to date.
Coolers are on back up generators for power, if needed.
Defrosting frozen food in cooler.
No hot holding during inspection.
Reviewed cooking, cooling, and reheating procedures.
Produce is pre-washed/ready to eat or is washed on site in prep sink.
Hand washing sinks have hot/cold water, liquid soap, and paper towels in dispensers.
Non-latex disposable gloves available. Hair nets/uniforms/aprons worn.
Wiping cloths stored in sanitizer - use sanitizer as per label. Test strips available.
Pot sinks available for pre-soaking and for manual cleaning and sanitizing if needed.
Meat slicer clean today. For parts cleaned in place, following directions on sanitizer bottle label.
Commercial dishwasher wash temperature good and final hot water sanitizing rinse reached 82C at final rinse gauge and 71C inside of the machine.
General cleaning and organization - following a routine cleaning schedule - good.
No obvious signs of pests. Pest monitoring in place. Pest contract in place.
