Observation (CORRECTED DURING INSPECTION): Knives were stored in the space/gap between prep table and wall.
Corrective Action(s): Do not store knives in this way, as the space between prep tables/walls cannot be easily cleaned and sanitized. Store all knives in or on designated knife holders (i.e., magnetic strip or easily cleanable knife racks).

Comments

- All hand washing stations were unobstructed and properly supplied with hot and cold running water, liquid soap, and paper towels.
- Bleach sanitizer solution available at 200 ppm (chlorine) for sanitizing surfaces.
- High-temperature dishwasher reached 71C at the dish surface during the rinse cycle - good.
- All coolers were measured at 4C or colder
- Walk-in freezer measured at -24C
- Hot held foods measured at 60C or hotter (aside from poached eggs, which were held at about 50C. Cook stated eggs are not held for more than 2 hours). *Time-tracking is required.
- Accurate thermometers available. *Ensure to keep temperature logs up to date.
- Food storage practices satisfactory. All food stored off the floor and properly covered.
- Ice machine, deli slicer, ventilation canopy, and all other equipment maintained in sanitary conditions. Scoops were properly stored in designated holders.
- Dry storage areas satisfactory.
- General sanitation is good.
- No signs of pest activity noted at time of inspection.
