Observation (CORRECTED DURING INSPECTION): Dried on food soil noted on the dicer.
Corrective Action(s): **Issue corrected at the time of inspection** Operator removed the dicer from the cleaned equipment shelf to have dicer scraped from dried on food debris and to re-wash and re-sanitize.
Ensure food handler wash all equipment after each use and do a visual inspection to ensure they are thoroughly cleaned and sanitized before storing away.

Observation: 1. Containers of food (sliced pickles, pepperoni, carrots) noted stored unprotected in the walk-in cooler.
2. Missing light shields noted on 3 light fixtures - In the walk-in cooler, above the dough machine, and in the BoH above the 2-door upright freezer.
Corrective Action(s): 1. Cover all exposed food in the walk-in cooler with a lid or plastic wrap. All food must be stored protected to avoid potential contamination.
2. Replace light shields noted on the 3 light fixtures - may purchase protective sleeve for each bulb, light cover or switch to LED light as they are break resistant. This prevents the accidental shatter or breaking of the light bulb which may contaminate food stored/ prepared below these fixtures.

Observation: Please clean and sanitize the following areas:
- Wall below the preparation table - by the cleaned cutting boards.
- In the interior, by the door of the 3-door refrigerator.
- Fume hood above the ovens - excessive grease and dust noted.
- Floor of the walk-in cooler - dark encrusted buildup.
Corrective Action(s): Clean and sanitize the aforementioned areas and maintain in a sanitary condition.

Observation: Broken rinse temperature gauges (did not move at all during the rinse cycle) noted on both high temperature dish machines.
Corrective Action(s): Fix the rinse temperature gauges to allow staff to determine if the machines are capable of reaching the required sanitizing temperature of 180F before using the machines.

Routine inspection conducted today:
All handwash stations, including the washrooms, were accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at ≤ 4C.
Note: Ensure all cold potentially hazardous food that are left out at room temperature during the lunch and dinner rush are returned to a functioning cooler within 2 hours if not completely used up.
All freezer units were at ≤ -18C.
Bleach sanitizer spray bottle and container noted. 200 ppm chlorine residual detected.
High temperature dish machines were able to reach 71.0C at the plate level during the rinse cycle.
Appropriate scoops, with handles, used in bulk food containers - remember to keep handles extending away and not touching food.
No signs of pest activities noted at the time of inspection.
Operator's FOODSAFE level 1 certificate available at the time of inspection - Expires July 24, 2023.
