304 - Premises not free of pests [s. 26(a)]
Observation: Cockroach activity noted in the front retail service area where sticky traps were placed in the following areas:
- underneath the espresso machine.
- Behind the ice machine.
- Under both of the front hand sinks.
According to manager, pest company control are on-site weekly to help rectify the pest problem. Operator is to submit copies of recent pest control reports for the last 2 months to the health department.
In addition to placing traps to monitor the cockroach problem, more effort needs to be placed to eliminate the problem:
- Ensure all food products and take out containers are stored in sealed containers.
- Repair entering points within the holes and above the suspended ceiling.
- Area in the suspended ceiling needs to be thoroughly inspected for entry points.
- Ensure daily cleaning is done.
- Potentially applying insecticide to eliminate the cockroach problem. Insecticide cannot be applied during any food preparation and the proper down time needs to be achieved before restaurant can re-open. After the application of insecticide, all food preparation must be thoroughly washed and sanitized. Insecticide can only be applied by licensed pest control technicians.
Fruit fly activity noted in the front and back service area. Grease trap removal was just completed this morning. Small infant insect, potentially infant fruit flies were noted around the following areas:
- grease trap
- back shelving units
- under counter by the handsinks.
Operator is to thorougly clean all surface counters and wall along the grease trap wall.

Observation: Seal all pest entry points such as:
- underneath the side door
- holes around sanitary sewer and water pipes.
- holes within the walls.

Comments

Routine inspection conducted and the following were noted:
All cooler units at 4C and equipped with thermometers.
Freezer units at -12C.
High temperature dishwasher achieved a final rinse temperature of at least 71C at plate level.
Hand washing stations satisfactory.
2 compartment sink available.
Chlorine used as sanitizer. To properly dilute a 100ppm chlorine solution, mix 1 teaspoon of regular household bleach with 1 liter of water.
General sanitation in the front service area and back kitchen area is generally kept relatively well. However, more efforts and more aggressive actions may be needed to be taken to eliminate the noted pest problem.
