Observation: The exhaust canopy has accumulated grease and dust on the filters. This will attract pests. The service sticker indicates the exhaust canopy should of been cleaned in December 2022.
Corrective Action(s): Immediately call a professional company and schedule the cleaning and service of the exhaust canopy to be completed this month.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: Cardboard and aluminum foil, soaked in grease, found to be lining the floor and other equipment. Staff stated they change the cardboard every 3rd day. This will attract pests and is a fire hazard.
Corrective Action(s): Discard the cardboard and aluminum foil at the end of every night. Clean the surfaces and put new cardboard on the surfaces in the morning.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: The front service handwashing sink has a constantly running cold water. The cold water tap is unable to completely turn the water off. The constant running water provides a water source for flies and rodents.
Corrective Action(s): Repair or replace the cold water faucet, so it can completely turn the cold water off and on.

Comments

A routine inspection was completed:
- Coolers 3C or colder; freezers -21C or colder; hot holding units above 60C; and thermometers present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Low temperature dishwasher had [Cl2] of 50ppm.
- Bleach sanitizer in spray bottles had [Cl2] over 200ppm. Staff replace the solution every 2 days, good. Ensure to mix 1 tsp of bleach to 500mL of water.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins separate or below RTE foods; and all foods stored 6" off the floor on shelves or platforms.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good. No signs of pests.
- FoodSafe certified staff present, or those that possess an equivalent (reckonized) course.

ACTION
All wiping cloths shall be placed in a bucket of sanitizer when not in use. The sanitizer shall be changed every 2-3 hours with a new solution. Add 1 Tbsp of bleach to 4L of water.
