Observation: Dishwasher detergent bucket was empty at time of inspection.
Ensure that counters and cuttingboards are being sanitized throughout the day and between tasks. Sanitizer bottle was measured and found to have 100 PPM Quat residual. Ensure that dispenser flushed prior to filling bottles.
Corrective Action(s): Replace bucket with new one and prime machine. Do not wash dishes until detergent is running through dishwasher.
Flush sanitizer dispenser prior to filling bottles. This was done and concentration of Quat measured 200 PPM.

All fridges are maintaining foods at 4 degrees Celsius or colder.
All freezers are -18 degrees Celsius or colder.
Rice in warmer is 60 degrees Celsius or hotter.
Ensure that temperatures are monitored and recorded daily.
Reorganize kitchen so that all items are stored off the ground and that rice and flour are stored in foodgrade bins with tight fitting lids.
Washable splashguard required at mop sink to protect dough mixer from contamination.
