Observation: Line cooler not in operation. Food items in ice bath being sotred in the inserts. Call a technician to fix the cooler unit to ensure it can adequately cold hold food items. Ice bath is a temporary measure and cannot be used long term. Cooler broken for ~ 1 week.

Observation: No staff on site has foodsafe certification. Staff indicated they have received formal training, but do not have a certified Foodsafe level 1 or equivalent. One staff with foodsafe certification must be on site at all times during operation. Provide staff with food safe certification course if operator is absent from the facility during operations.

Gen - All hand washing stations equipped with hot/cold water, soap and paper towel
- Walk in cooler and stand up cooler for pop storage are </=4C (3.6C, 3.4C)
- Walk in freezer is </=-18C
- bucket sanitizer with cloth soaking inside tested at 200ppm Quats.
- 3 compartment sink available for manual dishwashing. QUATS dispenser available and dispenses 200ppm QUATS concentration.
- All food items are stored seperate from chemicals, 6" off the ground and protected from contamination
- General sanitation is good.
- hot holding units are all >/=60C (chicken:69.1C) (rice:61.1C) (salsa mix: 68.1C)
- No pest observed during time of inspection.
- Operator with food safe certification not on site, permit posted
