Observation (CORRECTED DURING INSPECTION): 1) Dishwasher was not providing an adequate sanitizer concentration to effectively sanitize (destroy bacteria) on dishware/utensils
2) Sanitizer solution was not available on-site at time of inspection (for sanitizing food contact surfaces while using wiping rags)
Corrective Action(s): 1) Dishwasher sanitizing capabilities were restored using a temporary measure. Dishwasher is now providing 50ppm chlorine residual during rinse cycle
2) Demonstrated the correct method for preparing sanitizer solution to kitchen employee. All food-contact surfaces must be sanitized frequently using a food-grade sanitizer solution (eg. bleach and water mixture at 100-200ppm concentration).
*Ensure to confirm dishwasher sanitizer concentration of (50ppm or higher) on a daily basis using test strips (on top of the machine).
**Ensure to prepare (daily) and use (always) sanitizer solution on food contact surfaces to eliminate potentially harmful bacteria.

Observation: Sanitizer concentrate in the supply bucket is inadequate to sanitize dishware/utensils. The sanitizer concentrate has either degraded (old chemical) or been diluted with water. No additional sanitizer concentrate (Clean San) was available on-site.
Corrective Action(s): *Repeat Violation*
*Sanitizer concentrate was restored using a bottle of unscented chlorox bleach as an emergency measure to restore the sanitizing capabilities of the dishwasher.
**Ensure to keep backup supplies of all dishwasher chemicals on-site at all times (detergent, rinse-aid, and sanitizer).
***Train kitchen staff to check the dishwasher sanitizer concentration on a DAILY basis to ensure safe operation of the dishwasher.
***Future infractions related to improper operation of the dishwasher may result in elevated enforcement action (eg. issuance of violation ticket and/or correction orders).
