Observation (CORRECTED DURING INSPECTION): Meat slicer observed stored with food debris in the food preparation area. Staff began to clean and sanitze the equipment during inspection.
Corrective Action(s): Dissassemble the meat slicer. Clean and sanitize the meat slicer as per the approved sanitation plan, ensuring to remove all food debris and sanitize all pieces of the equipment. Do not store dirty equipment. Ensure all equipment is cleaned and sanitized after each use (or as per approved sanitation plan).

Observation: The following areas were observed with rodent droppings during inspection:
- Dry storage area (floors and 3-4 shelves). One bottom shelf has rodent droppings which has contaminated packaging material
- Underneath the dough mixer

The contaminated packaging material has been discarded by staff during inspection.
Corrective Action(s): Staff began cleaning up rodent droppings during inspection with sanitizer solution. Ensure to clean and sanitize all surfaces with chlorine sanitizer wearing PPE. Repair all areas mentioned by the pest control company to repair holes/entry points on site. Contact pest control company to re-assess pest issue and place traps as necessary. Submit most recent report to the health inspector for review.

Observation: Pool of water observed in front of ice machine.
Corrective Action(s): Clean the aforementioned area to remove pool of water. Ensure to clean up all spills to maintain the premise in a sanitary condition and to prevent rodent or other pest entrance/harbouring/breeding on site.

- Hot-holding units measured at or above 60'C
- In-use utensils observed stored in hot water >60'C
- General sanitation is okay during inspection
- All handwashing stations are unobstructed and adequately supplied with hot and cold running water, liquid soap and paper towel
- DDBSA/lactic acid sanitizer available in sanitizer buckets and measured at 727 ppm
- Ice machine observed in sanitary condition with scoop placed outside the machine
- Ice cream scoop observed stored in dipper well
- All food observed covered and stored at least 6 inches off the floor
- Staff observed wearing clean uniforms and hair nets
- Staff washroom observed in sanitary condition
- FOODSAFE Level 1 equiavalent trained staff available on site
- Permit posted in a conspicuous location on site
